Thai Turkey Lettuce Wraps
Serves 6

Ingredients

Peanut Sauce

  • ¼ creamy peanut butter
  • 3 tbs soy sauce
  • 2 tbs rice wine vinegar
  • 1 tsp sesame oil
  • 1 tbs fresh lime juice
  • 1 tsp minced fresh ginger

Filling

  • 1 tbs olive
  • 1 medium onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tbs red curry paste
  • 1 lb ground turkey
  • 1 cup shredded carrots
  • 1 cup shredded zucchini

To serve

  • Romaine leaves (small soft tortillas or bowls of rice are great alternatives)

Garnishes

  • Thinly sliced green onions, both white and green part
  • Whole peanuts
  • Chopped cilantro
  • Sliced jalapenos
  • Sliced avocado

Instructions

  1. Peanut Sauce: Put all ingredients in a jar and shake until smooth. Set aside until ready to use. If sauce is too thick, add 1-2 tbs water and shake.
  2. Turkey Filling: Heat oil in pan large enough for all ingredients. Add onions, garlic, and red curry paste. Stir until onions and garlic are evenly coated with curry. ~2-3 minutes. Add ground turkey and cook until turkey is cooked thoroughly. ~5-7 minutes. Add carrots and zucchini. Cook for another 2 minutes. Add peanut sauce and stir until meat and vegetables are coated. Set aside to cool slightly.
  3. Serve: Spoon the filling into romaine leaves and top with garnishes.
